Risotto Stuffed Peppers

Ingredients

1 Red Capsicum 1/2 (medium size)
2 Cooking Butter 1/4 tsp
3 Finely Chopped Garlic 1/8tsp
4 Cooked Brown Rice 3 tbsp
5 Basil leaves 2 to 3 leaves
6 Milk 1 tbsp + 1 tsp
7 Fresh Cream 1.5 tsp
8 Grated Cheese 1/2 cube
9 Salt and Pepper 1/8 tsp each
10 Chilli Flakes 1/16 tsp

Method

1 Microwave butter, garlic and basilfor 1 minute
2 Add milk and microwave for another 1 minute
3 Add cream, cheese(1/4 cube),basil, salt and pepper to the above
4 Microwave for 30 more seconds and the risotto is ready
5 Deseed the capsicum. Baste the inside and outer part with oil and salt.
6 Stuff the capsicum with the prepared risotto filling
7 Grate the remaining 1/4 cube of cheese on top as the final layer
8 Bake at 200 ° C for 15 minutes
9 Garnish with Chilli flakes and serve

Tip

1 Add some onion while cooking the brown rice for further flavoring
