Iced Lemon Cookies

Ingredients

1 All Purpose Flour (Maida) 1/4 cup
2 Sugar 1 tbsp + 1 tsp
3 Baking Soda 1/8 tsp
4 Salt 1/16 tsp
5 Vanilla Essence 1/8 tsp
6 Lemon Juice 1 tsp
7 Oil 4 tsp.
8 Lemon Juice for Icing 1/4 tsp
9 Icing Sugar 2 tbsp
10 Water 1/4 tsp

Method

1 Mix ingredients 1 to 4 togetherin a bowl
2 Now, add ingredients 5 to 7 also into the bowl and mix well
3 Using this mixture, make 3 balls of equal size and flatten them out.
4 Place them on a baking tray lined with butter paper
5 Bake at 175 ° C for 12 minutes
6 Transfer the cookies from the tray and let it cool on a cooling rack.
7 Prepare the icing by mixing ingredients 8 to 10
8 Spread the icing on top of the cookies
9 Serve after the icing has hardened.

1 To decorate the cookie – Sprinkle rainbow sprinklers on top of the icing
