Brinjal Boats

Ingredients

1 Brinjal medium size 1 number
2 Paneer 15 gms
3 Chopped Garlic ½ a clove
4 Black-Pepper powder 1 pinch
5 Lemon Juice Juice of 1/4th of a medium size lemon.
6 Salt ¼ tsp
7 Grated Mozzarella Cheese 10 gms
8 Oil 1 tsp
9 Bread Crumbs 10 gms
10 Bingo Mad Angles 2 numbers

Method

1 Cut the Brinjal to 2 halves lengthwise and scoop out the inner part.
2 Chop the scooped out part to small pieces and mix them with ½ tsp oil
3 Fill the mixture back into the Brinjal and bake for 15 minutes at 225 °C.
4 Take out the mixture and mash it well.
5 Add and mix ingredients (2 – 6)and 5 gms of grated mozzarella Cheese
6 Fill the mixture back into the Brinjal.
7 Top it with bread crumbs and the remaining grated cheese
8 Sprinkle the remaining oil on the filling and bake at 180°C for 15 minutes
9 Fix the sail(Mad Angle) on the boat.

Tip

1 After scooping out, apply lemon juice on Brinjal to avoid discoloration
