Ingredients

1 Cucumber 1/4 piece, chopped
2 Broccoli 1 big floret
3 Lettuce leaves 1 leaf, torn roughly
4 Cabbage 2 to 3 leaves, julienned
5 For the Dressing:
6 Honey 1/2 tsp
7 Lemon juice & Lemon zest 1 tsp& 1/4 tsp
8 Olive oil 1 tsp
9 Thyme & Parsley 1 sprig each
10 Salt & pepper According to taste

Method

1 Chop the cucumber into cube shapes.
2 Split the broccoli into smaller florets.
3 Roughly tear the lettuce leaves.
4 Chop the cabbage into juliennes.
5 Toss well.
6 For the Dressing:
7 Mix ingredients 6 to 10 and whisk well.
8 Pour the dressing over the veggies/greens.
9 Serve immediately

Tip

1 Adjust the seasoning (salt & pepper) according to taste.

Ingredients

1 Unsalted Cooking Butter 2 tbsp
2 Dark Chocolate 13 gms
3 Sugar 1/4 cup
4 All-purpose flour 1/8 cup
5 Egg Half
6 Unsweetened Cocoa powder 1 tbsp
7 Vanilla Extract 1/4 tsp
8 Baking powder & Salt 1/16 tsp each
9 Whipped Cream 4 tbsp
10 Caramel & peanuts 1 tbsp each

Method

1 Microwave butter and dark chocolate until melted or 45 seconds.
2 Stir in sugar and vanilla and mix well. Let it cool.
3 Add the beaten egg, cocoa powder and blend well.
4 Finally add flour, baking powder & salt. Pour the batter into moulds.
5 Bake for about 30 mins or until dark brown.
6 While brownies are baking, whip the cream and set aside.
7 In a glass container, spoon a tbsp of caramel and peanuts.
8 Layer cream and brownie.
9 Decorate with a dollop of whipped cream and sprinkles.

Tips

1 Add walnuts instead of peanuts for a variation in taste.
2 Add a dollop of ice-cream instead of cream on top.

Ingredients

1 Unsalted Cooking Butter 1 and 1/2 tsp
2 Milk&All Purpose Flour 1/4 cup each
3 Baking Powder 1/2 tsp
4 Pineapple Essence 1/8 tsp
5 Sugar 6 tbsp
6 Egg 1
7 Salt 1/16 tsp
8 Pineapple As required, chopped
9 Chilled Fresh Cream 2 tbsp
10 Icing Sugar 1/2 tbsp

Method

1 Mix butter & milk in a bowl & microwave for 45 secs. Let it cool.
2 Sieve flour, baking powder and salt into another bowl.
3 Beat egg, sugar and pineapple essencein another bowl.
4 Add the egg mix into the flour mix & mix well. Lastly, add the milk mix.
5 Line a 4/4-inch square shaped cake tin with butter.
6 Put the batter mix into the tin and bake at 200 ° C for 20 to 25 minutes.
7 Let the cake cool. Remove and slice the top layer off.
8 Whip the cream with the sugar, till it holds its shape.
9 Spread the chopped pineapple & spread a layer of cream frosting over it.
10 Place the other piece on top. Spread frosting on all sides (top layer also).

Tips

1 Sprinkle pineapple juice or sugar syrup on the sponge cake.
2 Garnish with pineapple slices and cherries.
3 Serve chilled.

Ingredients

1 Potato 1 (Medium Size)
2 Oil 1 tbsp
3 Cold Water 1 Bowl
4 Salt 1/4 tsp or as per taste
5 Chilli Powder 1/8 tsp
6 Napkin 1 standard Size
7 Mayonnaise 1 tsp
8 Tomato Sauce 1/4 tsp
9 Oregano 1/16 tsp
10 Parsley 1 small sprig

Method

1 Slice the potatoes into thin layers using a slicer.
2 Dunk the slices into the cold water.
3 Wipe them dry with a clean napkin.
4 `Add salt, chilli powder and oil to the slices and toss them well
5 Take a microwave safe plate and layer a parchment sheet on it.
6 Arrange the slices on the parchment sheet.
7 Microwave for 2 to 3 minutes depending on the number of slices.
8 Dip - Mix Mayonnaise & Tomato Sauce together with parsley& oregano
9 Serve the crisp wafers along with the dip.

Tip

1 Check every 30 seconds, if the slices are crisp
2 Add, cheese, onion powder or garlic powder for variation in flavor.

Ingredients

1 Plain flour 1/2 cup
2 Chilled Butter 25 gms + 1 tsp
3 Sugar 2 tbsp + 2 tsp
4 Milk 2 tbsp
5 Pitted Cherries 10 to 15
6 Cornflour 1/2 tbsp dissolved in 1/2 tbsp water
7 Vanilla Essence 2 drops
8 Food colour-Red (Optional) 1 drop

Method

1 Knead the flour together with Butter(25 gms), Sugar(1 tbsp) & Milk.
2 Roll of the dough into a circle using a rolling pin.
3 Line the tart mould with the rolled out dough.
4 In a bowl, beat butter and sugar with a hand blender.
5 Stir in the cornflour solution & pitted cherries and microwave for a min.
6 Fill the tart with the above cherry mixture.
7 Baste the tart with egg wash.
8 Bake for 20 minutes at 180° C or until it turns golden brown.
9 Decorate with sugar candies or sprinkles.

Tips

1 Serve with vanilla ice-cream.
2 Add almond extract instead of vanilla essence for variation in taste.

Ingredients

1 Potato 1 number
2 Processed Cheese 1/2 cube
3 Mozzarella Cheese 1 tsp
4 Sweet Corn 2 tsp
5 Finely chopped Bell Pepper 1 tbsp
6 Oregano,Basil,Parsley 1/2 tsp each
7 Green Chilli (Medium size) 1/4th
8 Chopped Onion 1 tsp
9 White Sauce 1 tbsp
10 Salt & Pepper 1/4 tsp

Method

1 Bake potatoes with skin for 45 mins at 200 degrees Celcius.
2 Microwave oil for 30 seconds.
3 Add onion,corn,capsicum,chilli, salt and pepper & microwave for 2 mins.
4 Remove the potato and half it. Scoop out the middle using a spoon.
5 Mash the scooped potato & add processed cheese, seasoning and herbs.
6 Mix the potato mix and corn mix together and stuff into potato halves.
7 Top it with white sauce, mozzarella cheese and parsley.
8 Bake for another 10 mins and serve hot.

Tips

1 Add sour cream or mayonnaise for a variation.
2 Filling can be veggies of your choice. Like Zucchini, Brocolli and more.

Ingredients

2 Crushed Digestive Biscuit 2tbsp
3 Caramelized toffee 2tbsp
4 Fresh Cream 3tbsp
5 Robusta Banana 1/2 Medium Size
6 Grated Chocolate As required

Method

1 Combine the crushed digestive biscuitswith butter.
2 Line the base of a tray with the above mixture and refrigerate until set.
3 Whip the fresh cream and set aside. Slice the Bananas.
4 Remove the tray from the fridge & arrange the sliced bananas on it.
5 Spread the prepared toffee followed by half the whipped cream.
6 Arrange banana slices again and top it with remaining cream.
7 Drizzle some chocolate shavings and refrigerate for about 45 minutes.
8 Serve cold.

Tip

1 You may use coffee powder or other sprinkles instead of chocolate.

2 Red Liquid Food Color 1/8 tsp
3 Condensed Milk 1/4 cup

Method

1 Sieve&Mix flour, baking soda, baking powder, cocoa powder.
2 Whisk butter, condensed Milk and food color in another bowl
3 Add Vanilla Essence and whisk again until blended well.
4 Add the mix from step 1 and blend again along with butter milk.
5 Line the cupcake tray with cupcake liners
6 Fill 3/4th of the linerswith the above mix.
7 Bake at 180 ° C for 15 minutes.

Tips

1 Don’t whisk too vigorously.
2 At step 7, check the cake after baking for 10 minutes.

10 Salt & Pepper 1/16 each

Method

1 Microwave Oil& Garlic in a bowl for 30 seconds
2 Add chilli powder, cumin powder in to the hot oil & mix well.
3 Add Beans, tomato sauce and microwave again for 30 seconds.
4 Place the tortilla on foil/butter paper.
5 Spread mayonnaise & Salsa all over the tortilla.
6 Place the chopped Veggies, Beans & Rice in the middle across the tortilla
7 Sprinkle salt & pepper on top.
8 Fold it the ‘Mexican Burrito’ way and serve
